Seared Salmon with Sautéed Kale & Fresh Guacamole

Seared salmon is delicious and really quick and easy to prepare. Searing gives it a lovely crust and deepens the flavor. Pair it with some zingy balsamic sautéed kale and healthy scoop of fresh guacamole and you’ve got a healthy and satisfying meal.

Searing salmon fillets requires nothing more than a little salt and pepper, a nice hot pan, and a bit of olive oil.

The balsamic greens are a beautifully deep, rich green and are incredibly nutrient dense. The balsamic vinegar and garlic adds a dose of antioxidants and some acidity to balance the richness of the salmon.

Fresh guacamole adds another helping of superfood to the dish. Our favorite version only has 4 ingredients: ripe avocados, fresh lime juice, cilantro, and sea salt.

This is an easy salmon recipe to prepare, make the guacamole and prepare the kale ahead of time. Add all the ingredients for the kale to a cold pan and place it on the stove (Olive oil in the bottom, then the Kale, then the Garlic, Salt & Pepper and a drizzle of Balsamic Vinegar) – turn on the heat when you flip the salmon. Everything should be ready to go at the same time this way. :)

Recipes:

Perfectly Seared Salmon

  • 2 6oz salmon fillets
  • olive oil
  • salt & pepper
  1. Heat a pan over medium heat
  2. Wash the Salmon fillets and pat them dry and sprinkle them with salt & pepper
  3. Drizzle a little olive oil in the pan and add the fillets, they should sizzle happily
  4. Cook until they’re opaque 2/3 of the way through and them flip them over and cook the other side until done – about 3 or 4 minutes

In the meantime…

Sautéed Kale

  • 1 bunch lacinato (Tuscan) Kale stems removed and sliced into thin strips
  • 1 clove Garlic, minced
  • 2 tbsp good Balsamic Vinegar
  • olive oil
  • salt & pepper
  1. In another deep skillet  over medium heat add the Olive Oil, Kale, Garlic, Balsamic Vinegar, and Salt & Pepper
  2. Turn frequently (tongs are great for this) until the Kale is wilted – about 3 or 4 minutes

Super Simple Guacamole (do ahead)

  • 1 ripe avocado
  • juice of half a lime
  • small handful fresh cilantro chopped
  • salt to taste
  1. Smoosh the Avocado with a fork
  2. Add the Lime Juice, Cilantro, and Salt
  3. Stir it all around

Plating:

  1. Greens first, then Salmon, then a big spoonful of the guacamole
